Small and shiny, tiny turtle beans double in size after cooking. They pack a flavorful punch when used in Mexican dishes–which is their country of origin! But what makes them different from their black bean cousins typically used in this country’s cuisine? Turtle beans are a healthier alternative, since they have more protein and fiber. They also hold their shape better than black beans thanks to their small size and firm texture, are less mushy, and have a mushroom-like taste.
Superfood stat: Black Turtle Beans have 15 grams of protein per 100 grams, and are rich in B-complex vitamins.
Especially good for: Vegetarians, vegans, and those who need increased fiber in their diet.
How to store: Don’t spill the beans! Keep them in an airtight container in a cool, dry place, and their shelf-life will be around a year.
How to cook: When ready to use, give them a soak overnight and then rinse and sort them before cooking.
