From there, they spread across the Americas and gained popularity, especially in the South. And you might be wondering, how do black eyed peas grow so well in such varied climates? The answer is the sun! These sun-worshippers need a lot of rays and a little shade to give them the firm texture and smoky-sweet, nutty flavor they are known for.
