These pretty piebald beans really do look like little snow-capped mountains, with rich tan hues dusted with white. They’re similar in size to kidney beans, and have a velvety texture and potato-like flavor, making them ideal for hearty stews, casseroles, and cozy winter fare. Though their origins are in Peru, they spread quickly throughout South and Central America, and then all the way to Europe and the USA.
Superfood stat: Snow Cap Beans have 23 grams of protein per 100 grams, and only 9 grams of fat. These beans are blessed with calcium and iron, too.
Good for: Vegetarians, vegans, and those looking for a bean low in fat and high in fiber and protein.
How to store: Don’t spill the beans! Keep them in an airtight container in a cool, dry place, and their shelf-life will be around a year.
How to cook: When ready to use, give them a soak overnight and then rinse and sort them before cooking.
