Heirloom Calypso Beans hail from the Caribbean and were discovered over 400 years ago. A close hybrid relative of the kidney bean, they have a black and white spotted appearance, prompting the alternative names “Ying Yang” and “Orca” beans. They have smooth taste and texture, and double in size when cooked. Some folks say they taste like Cannellini beans. We think they work well in Mexican dishes, dips, as well as soups!
Superfood stat: Calypso Beans have an impressive 24 grams of protein per 100 grams and contain potassium, zinc, thiamin, iron, magnesium, Vitamin K, and calcium.
Especially good for: Vegetarians, vegans, and those seeking to boost their cardiovascular health with an excellent source of vitamins, minerals, and fiber.
How to store: Don’t spill the beans! Keep them in an airtight container in a cool, dry place, and their shelf-life will be around a year.
How to cook: When ready to use, give them a soak overnight and then rinse and sort them before cooking.

Fun Fact: Calypso beans are also known as Orca beans. While orcas share a similar black and white coloring as our beans, these massive marine mammals are rarely seen in the Caribbean, where the Orca bean comes from.
